10 simple recipes you can whip up in 10 minutes or less

There’s hardly a day that passes where we don’t daydream about food. One scroll through Instagram and you’ve got enough inspiration to become the next amateur master chef.

The only problem? When you click through to see a recipe with a cook time of “one hour and 30 minutes.” An in-depth recipe can be incredible — when we’ve got the time. But if you’re like most of us mere mortals who are working busy schedules and want to whip up healthy meals fast, it isn’t ideal.

Fear not, dear friends, because there are ways that you can enjoy healthy, vitamin- and protein-rich eats that come together in less than 10 minutes — at any time of day. The answer? Well, it’s in the eggs.

We caught up with Registered Dietitian Sue Mah, who stresses the importance of choosing nourishing foods and eating healthy when you’re constantly on the go. “Stocking up on versatile and healthy ingredients, like eggs, is essential in keeping us full and fuelled after a busy day. Eggs are also a key part of the most recent update to Canada’s Food Guide as a recommended protein food and a quick, easy, delicious ingredient to add to your everyday diet.” explains Mah.

Zucchini Pasta

Serves: 2

Cook time: 5 minutes

Ingredients: 

  • 2 eggs, fried
  • 12 oz (345 g) prepared zucchini noodles
  • 1/2 cup (125 ml) cherry tomatoes, halved
  • 1/4 cup (60 ml) basil pesto

Spicy Avocado Eggs on Toast

Ingredients: 

  • 1 tbsp (15 ml) butter
  • 6 eggs
  • 1/4 tsp (1.25 ml) each salt and pepper
  • 1 ripe avocado, coarsely mashed
  • 2 tbsp (30 ml) chopped cilantro
  • 4 slices rye bread, toasted
  • 2 tsp (10 ml) chilli oil

Avocado toast has been trending for quite some time and we can’t see a single thing wrong with that. To keep the trend going strong, upgrade your wholesome avo-toast with a drizzle of chilli oil and some protein-rich eggs. Fun fact: eggs contain all nine essential amino acids. Greek Burrito Snack Wrap

  • 2 tbsp (30 ml ) tzatziki sauce
  • 2 whole wheat flour tortillas (7-inch/18 cm)
  • 1/4 cup (60 ml) halved cherry tomatoes
  • 2 tbsp (30 ml) crumbled feta cheese

In our eyes, burritos can do no wrong. But why bother spending $10 (or, let’s face it, more) on a burrito at a restaurant when you can easily make your own at home? Pick up the ingredients at your local grocery store, add some eggs to the mix to help keep the immune system strong, and get ready to chow down. Shakshuka For One

Ingredients: 

  • 1 cup (250 ml) pasta sauce
  • 1/2 tsp (2.5 ml) paprika
  • 1/8 tsp (0.5 ml) cumin (optional)
  • eggs
  • Pepper, to taste
  • 2 tbsp (30 ml) grated or crumbled cheese (e.g. feta, cheddar, parmesan)
  • 2 tbsp (30 ml) chopped fresh cilantro, parsley, mint, green onions or a combination of fresh herbs

Save yourself precious prep time by making this incredibly satisfying and Instagrammable shakshuka. Add your favourite prepared pasta sauce for the tastiest base and change up the recipe by adding whatever veggies you have in your fridge. Anything goes!

Basic Soft Boiled Eggs

Ingredients: 

  • Water
  • 2eggs
  • Salt and pepper, to taste (optional)

Soft boiled eggs evoke a sense of nostalgia from childhood when you happily dipped sliced toast “soldiers” into a golden well of egg yolk. Here’s the thing: this is still a foolproof way to enjoy a nutritious snack, morning, noon, or night.

Easy Pack-and-Go Salad

Serves: 2
Prep time: 10 minutes

Ingredients: 

  • 4 cups (946 ml) fresh baby spinach
  • 1/2 cup (125 ml) sliced cucumbers (half moons)
  • 1/2 cup (125 ml) halved cherry or grape tomatoes
  • 1/2 cup (125 ml) canned chickpeas, drained and rinsed
  • 2 hard-boiled eggs, peeled and sliced

Vinaigrette: 

  • 1/4 cup (60 ml) extra-virgin olive oil
  • 2 tbsp (30 ml) apple cider vinegar
  • 1 tbsp (15 ml) minced shallot
  • 2 tsp (10 ml) chopped fresh chives
  • 1 tsp (5 ml) Dijon mustard
  • 1/2 tsp (2.5 ml) honey
  • 1/4 tsp (1.25 ml) each salt and pepper

Making lunch doesn’t need to feel like a chore, and it doesn’t need to take any longer than 10 minutes. This easy, fresh salad option is packed with flavour, and it’s healthy, too. “Studies actually show that our bodies better absorb nutrients from veggies when eggs are eaten with them,” explains Mah. Besides, you get to make your own vinaigrette from scratch!

Quick Morning Pizza

Prep time: 4 minutes
Cook time: 3 minutes

Ingredients: 

  • 2 eggs
  • 1/2 tsp (2.5 ml) dried oregano or basil (optional)
  • 8 thin slices pepperoni
  • 2 tbsp (30 ml) shredded part-skim mozzarella cheese
  • 3 tbsp (45 ml) pizza or pasta sauce, warmed if desired

Egg Salad Pinwheel Wraps

  • 6 hard-boiled eggs, peeled and finely chopped
  • 1/4 cup (60 ml) light mayonnaise

  • 2 tsp (10 ml) yellow mustard
  • 1/4 tsp (1.25 ml) each salt and pepper
  • 4 lettuce leaves
  • 4 small flour tortillas

They say “you eat with your eyes first,” and when it comes to these appetizing eats, that’s certainly the case. Simply prepare the egg salad in advance and quickly roll it with some tortillas before you head out for the day. That way, you’ll have ready-to-eat bites on hand. Mah often turns to recipes like this when feeding a bigger (and possibly more picky) crowd: “Eggs and veggies are an ideal pairing for flexitarian and vegetarian meals and snacks.”
