From France to Calgary: The story behind the city's newest French bakery

Earlier this year, a brand-new cafe and bakery opened its doors in Calgary, offering a taste of France right here in the city.
Ronan and Isabelle, the couple behind Choux & C, moved from France to Calgary in 2022, in search of a different life experience.
As if moving countries wasn’t already major, the pair also decided to switch up on their career paths.
“Ronan was an engineer, and I was a lawyer, so we switched our careers and wanted to do something more meaningful,” Isabelle told Dished.
While she began working with Monogram Coffee, Ronan worked at Avitus Wine Bar, where he developed a passion for creating memorable guest experiences and baking, something he had never professionally done before.

“Ronan was really detail-oriented and precise in his job, so it’s something that really helped him with baking,” she adds.
Fast forward to 2026, and the pair opened their first brick-and-mortar spot, Choux & C in Marda Loop, bringing together Ronan’s passion for baking and Isabelle’s coffee expertise under one roof.
“We really love gathering people, and that’s really what shaped the idea of building a bakery.”
What’s on the menu?
Choux & C, which opened its doors to the public in March, offers both a spot to pick up freshly baked pastries and showstopping desserts, and a cozy neighbourhood coffee shop in the heart of Marda Loop.
Everything is baked in-house and in smaller quantities, putting an emphasis on the quality and consistency of the products.
“We’re using French flour, we’re using a high-quality butter too, so that makes a lot of importance in the freshness of the products,” Isabelle explains.
So if you’re looking to get your hands on some of Choux & C’s pastries, you’ll want to get to Marda Loop early, as they often sell out.

As the name suggests, the star of the show is its Choux à la Crème, or what we commonly refer to as cream puffs. The little balls of fluffy choux pastry are filled with cream, with Choux & C serving around 10 different flavours at any given time, including everything from vanilla and pistachio to coconut passionfruit.

The spot also offers savoury options such as the Gougère sandwiches, featuring the same choux pastry, loaded with toppings like smoked salmon and pesto chicken.

Calgarians won’t want to skip out on Choux & C’s coffee either, as the spot serves espresso-based beverages and its own unique offerings, such as the Breizh Latte, which features salted caramel and buckwheat flavours.
Choux & C is open from Tuesday to Saturday.
