Pan Roasted Scallop (duck prosciutto, green apple, five spice duck jus) • This was one of the best dishes of the night. Although scallop was not the sweetest, it was perfectly cooked and paired well with salty duck prosciutto. The cured meat was homemade and tasted really fresh. The crispy sunchokes and puree balanced out the richness of the dish and provided a nice textural difference. Apples provided harmony by providing acidity but it was not overpowering.
