Trevor Bird to preview new Fable Diner dishes at Greasy Spoon dinner

Save On Meats’ popular Greasy Spoon supper series is heating up once again this year, and their April event will feature Chef Trevor Bird of Fable, who is also at work prepping his Fable Diner for a summer opening.

The Greasy Spoon’s 14th fundraiser dinner event will take place on Tuesday, April 26 at Save On Meats, and while the menu has yet to be released, Bird said in a Tweet that it will be a “great opportunity to try out some dishes that will be introduced on our menu” at the forthcoming Fable Diner.

Fable Diner is moving into what was previously Reno’s Diner inside the Lee Building at Main and Broadway. The Mount Pleasant restaurant is in the midst of a full and massive overhaul, and we can expect Bird to put his signature restrained and locally-minded stamp on the eatery’s diner-inspired fare.

Doing a Greasy Spoon Dinner, then, seem serendipitous for Bird, with Fable Diner on the horizon, and the “diner” theme of the Greasy Spoon events. As always, aside from the food and the good fun of the dinners, the proceeds go to A Better Life Foundation.
