Timber: Chris Whittaker preps casual spot next to Forage

The Listel Hotel will soon be expanding their food and drink offerings with the addition of Timber, a new casual restaurant next to Forage, and run by Forage’s chef Chris Whittaker.

Forage and Whittaker are known for their local and sustainable fare (Forage is one of Vancouver’s greenest restaurants) and Timber will also espouse the same food philosophy.

Timber already had a teaser back in May at a his Sandwich, That Beer event, and Whittaker and team are at work polishing the menu of Canadian classic fare and the beverage program, the latter of which we’re told will be broader than what’s on offer at Forage.

The restaurant is going right next door to Forage in the Modern Art Gallery space (that big black/glass box at the corner of Robson and Jervis) but there is work to be done and permits to obtain from the city before the hammers start pounding.

Timber is eyeing a fall 2015 opening.
