One of Vancouver’s most celebrated vegetarian restaurants, The Parker, will be closing this month, and the owners will open a new eatery in its place.
Lauded for its sustainable practices and vegan and vegetarian fare, The Parker has been a favourite destination for discerning diners since its 2012 launch.
The Parker announced recently they will close after service on June 13, 2015, but soon after the owners will be opening a “casual, walk-in” restaurant at the same location, and the new place will also include vegetarian and gluten-free “faves” The Parker’s fans have come to rely on.
The current team at The Parker includes partners Steve Da Cruz, Martin Warren, and Tiffany Easton, and in the kitchen since 2014, chef Felix Zhou. Zhou took over from Curtis Luk, who stepped in after the original chef, Jason Leizert, departed in 2013.
Here’s The Parker’s farewell message in full:
Change is good.
In this business, you rarely get to go out on top. But we are. And we’re really excited about it. Saturday, June the 13th will be the final service of The Parker and we hope to see you before then.
Or after! We’ll be launching a casual, walk-in concept very soon (at our current address) that will be a lot of fun and accessible to everyone. Any gift certificates will be honoured indefinitely as well.
Don’t worry; gnocchi, and other vegetarian and gluten-free faves will still be available under our new banner, as will other carefully selected proteins that will be destination-worthy. Details and menus to come soon.
We’re so very grateful for sharing your celebrations with family and friends for the past three years and we really look forward to making your next visit with us absolutely dynamite.
With deep thanks and excited anticipation, we’re thrilled to show you that change can be good and delicious!
Steve, Tiffany, Martin & Felix
