Sugar Fix: The top treats at Thomas Haas Chocolates and Patisserie

Sugar Fix is a series profiling desserts in Vancouver. Bakery and café owners divulge the three desserts that are most likely to fly off their shelves, as well as which of their products are their personal favourites. Next up is Thomas Haas Chocolates and Patisserie.

Thomas Haas operates two popular cafés in Vancouver serving an impressive array of deliciousness. The menu is extensive and includes (but is definitely not limited to) chocolates, macarons, croissants and tarts. The pastry chef has been recognized with countless awards for his unparalleled skills.

Saying Thomas Haas is a truly amazing chocolatier is an understatement. The man is to chocolate what Christian Louboutin is to red-soled pumps. Catch my drift ladies? He is a genius in all sense of the word and, lucky for us Vancouverites, we are able to satiate our sweet tooth and indulge in his famous creations in both the North Shore and Kitsilano stores. Both cafés are beautiful and spacious. I recommend sitting in the café as opposed to taking your treats to go. The unwavering aroma of chocolately goodness and the flawless ambiance is too good to pass up. A trip to Thomas Haas Chocolates and Patisserie is, hands-down, one of the ideal date ideas (hint, hint, wink, wink to all you boyfriends out there).

It is always a pleasure getting the details from the man who is responsible for it all. Thomas Haas took out a few minutes to answer some of our pressing questions via e-mail. Take a look:

From being the Executive Pastry Chef at the Four Seasons in Vancouver, working at a famed restaurant in New York and then creating Thomas Haas Fine Chocolates and Patisserie, what has been one of the stand-out highlights of your experiences? 

There have been many highlights along the way! My first stop in Canada (Four Seasons Vancouver) was an amazing experience professionally and personally. I loved the hotel, the city and the people.

New York City and working at Daniel Boulud is the ultimate life and work experience. Still to date, we are very good friends and I have my utmost respect for Chef Boulud.

Being back in Vancouver, the highlight is how much the city has embraced us. We would have never thought in our dreams of having such a wonderful experience with our customers and colleagues. The support has been amazing and our staff is our family.

Your desserts are impeccably beautiful, how important is it to ensure quality both in presentation and in taste? Are the two equally important? 

Both are equally important, however, taste should always come first! Consistency in quality is a daily effort. We try to never take it for granted.

As a celebrity in the Vancouver dessert scene and a winner of a myriad of awards, can you offer any bits of advice to aspiring pastry chefs working toward fulfilling their dreams? 

Well, I am definitely not a celebrity but I can offer lots of advice! Spend a good amount of time to find out who you are and what you need to be happy! Then once you’ve made the decision of becoming a pastry chef, dedicate yourself to the craft. Keep learning every day, work hard at it and fuel your passion. Never look back!

Lastly, which menu items do you recommend for first-time visitors?

Pistachio Sour Cherry Tart, Lemon Tart, Crispy Chocolate Raspberry cake and the Milk Chocolate with Passion Fruit and Almonds cake.
