Thierry, by pastry chef Thierry Busset, is nothing new to sweet-toothed Vancouverites. The airy café with an outdoor heated patio is a real gem in the heart of downtown. Design is upscale; palmwood walls, a lace patterned ceiling and iconic Thonet bentwood café chairs invents a very Parisian vibe. The space beams with elegance and sophistication while still being simultaneously casual and impeccably cool. Convenient for a late-night last course, the café is open until midnight and fully licensed (think Kahlua soaked tiramisu). So make those few loopy steps from dinner and drinks in the downtown core and swap your nightcap for a slightly boozy dessert.
With a solid array of items to choose from, we asked for some guidance for first-timers. The team at Thierry insists Buzz readers plow their forks into these three items.
Here we have hazelnut dacquoise, salted caramel, crisp praline and chocolate mousse layered beautifully. Insanely rich and decadent in all the right ways.
Sweet pastry marries light lemon curd in this perfectly executed dessert. Lemon tarts should not be wholly sweet. Thierry does it right. This tart uses lemons in all of their tangy, sour glory. The only word two words to describe this: damn good.
Thierry Busset can do no wrong in my eyes and this grown-up dessert, Tiramisu made with mascarpone sabayon coupled with a coffee and Kahlua soak, is deserving of utmost praise.
