Back in 1939, the “Panorama Roof” at the Hotel Vancouver opened and was regarded as one of the hottest spots in the city. In the 80s, the room closed as a public venue and became a private venue for catered events. Instead, hotel guests would dine at the Griffiths and 900 West Lounge.
Later this month, in conjunction with Hotel Vancouver’s 75th year anniversary, The Roof on the fifteenth floor is reopening as a pop up restaurant. At the helm are Michael Pye, the general manager of the Fairmont Hotel Vancouver and Cameron Balledine, the executive chef.
Bubbles and traditional cocktails were on offer and I gave the Negroni a try. The beverage is made with gin, vermouth and some campari, and boy, does it back a punch! A twist of orange peel completes the cocktail.

These cocktails are crafted lovingly by the bar staff, many who have been with Hotel Vancouver for years.
Some of the food items we tried included an ingenenious twist on a Prawn Cocktail. Another delicious bite was the Innisfail Lamb Popsicle.
The Roof will also bee serving Afternoon Tea daily. If you time it right, you might be just in time to see the amazing sunset as well.
For those of you who have been mourning the lost of Power Breakfast Meetings at Griffiths, you will be happy to know that they will be serving breakfasts as well, starting at 6:30 on weekdays!
They are just putting finishing touches on the space (carpets being the most noticeable requirement) but are aiming to be open on Valentine’s Day with a special 6-course menu.
This venue will stay open until Fall, so be sure to give them a try over the next few months.
Did I mention that the views are truly spectacular? At 111-metres above ground, it boasts breathtaking vistas of the city.
