Family behind a Vancouver restaurant institution debuts new Thai concept

For those who have been waiting for Jay Nok Modern Thai to open its doors, we have some great news. The concept from the family behind local restaurant institution SalaThai is finally ready to open in Olympic Village.

Slated to launch on Thursday, Feb. 27, Jay Nok has been a labour of love. SalaThai co-founders Sam and Joy Kongsilp call this upcoming opening a deeply personal milestone, as they will turn over their legacy to the next generation.

“SalaThai was built on a foundation of family, tradition, and love for Thai cuisine. Jay Nok reflects those same values but with a fresh, innovative vision,” said Joy.

At the helm of the kitchen here is Jay Nok co-owner and Executive Chef Bumpen “Nok” Khangrang, who is joined by Consulting Chef Clement Chan.

Aiming to bring the Thai tradition of “Sanuk,” which means “finding joy and pleasure in everything you do,” Jay Nok’s menu draws inspiration from the streets of Thailand.

For lunch, expect dishes such as Central Som Tom, a tangy papaya salad, or the Pad Kee Mao, a bold and spicy drunken noodle dish. When it comes to dinner service, think bites like Oxtail Green Curry, Pad Thai Chao Wang, and more.

Jay Nok’s beverage program will offer Thai-inspired cocktails, craft beer, and a solid list of BC wines.

The 3,900 sq. ft., 126-seat restaurant took over the space from The Flying Pig. It’s completely different inside, thanks to the design skills of Jute Studios, who said co-owner Bobby Kongsilp’s vision drove their plans for the room.

“Inspired by Bobby’s vision to honour Joy Kongsilp’s beloved restaurant SalaThai, the design captures the essence of Thailand while offering a fresh experience for a new generation,” says Tia Smith, Co-Founder of Jute Studios.

At launch, you can find Jay Nok open daily from 11:30 a.m. to 3 p.m. for lunch service and 5 p.m. to 10 p.m. for dinner service.
