There a few things we know for sure about Hawksworth.

One, it lives up to its illustrious reputation and two, it has some of the prettiest wagyu beef carpaccio we’ve ever laid eyes on.

It’s not news that the restaurant located on the main floor of the Rosewood Hotel Georgia in the heart of Vancouver is world-class. Ever since it opened its doors in 2011, Hawksworth has garnered attention and buzz for its approachable formal-yet-casual vibes, amazing service, unreal offerings, and of course, the talented and globally-recognized chef that started it all – David Hawksworth.

With the freshest of fresh ingredients from purveyors including the nearby and organically-certified farm at UBC, diners can enjoy quality produce and impeccably flavourful eats no matter which dishes they choose to order.

And even though we hate to play favourites, it’s hard not to have them from a menu this incredible.

Definite can’t-misses, hard yes’, no-brainers – whatever you want to call them – if you’re dining at Hawksworth these dishes are simply way too good to pass up.

If you’re having trouble choosing a few of the overall drool-worthy offerings from the West Georgia Street restaurant, here are 5 items you can’t leave Hawksworth without ordering.

Squid (Hanna McLean/Daily Hive)

Squid with peanut, nashi pear, crispy pork, and drizzled in a chili vinaigrette. You could share but the portion is enough to satisfy a solo squid craving for a while.

Available during lunch service.

Gnocchi (Hanna McLean/Daily Hive)

Caramelized gnocchi from this spot rivals pasta in Italy. Yes, we said it. It is a 10/10. Then again, why wouldn’t a combo of parsley root, chorizo, madeira, and parmesan not be?

Available during lunch service.

Carapaccio (Hanna McLean/Daily Hive)

Almost too pretty to eat – almost – this carpaccio took our breath away. Behold the dreamiest dish made of thin and tender wagyu beef, parsley, manchego, and puffed beef tendon.

Available during lunch and dinner service.

Dark Chocolate

Dessert (Hanna McLean/Daily Hive)

Simple and sublime – a combo of dark chocolate, peppermint, and cocoa nib. Enough said.

Available during lunch and dinner service.

Burger (Hanna McLean/Daily Hive)

It’s the Hawksworth beef burger – and it’s amazing. A tender and juicy patty topped with applewood smoked bacon, aged cheddar, and onion ring, lettuce, tomato, and served with frites. This tasty mouthful is one of the best burgers you can get in the city. If you’re going to do cheat day, do it right and opt for this guy.

Available during lunch service.
