Granola & yogurt cups recipe

I’m a granola person. It’s essential for my happiness.  So you can only imagine how happy I was when I figured out how to use the loyal muffin tin to create these fun sized granola rounds.

These on-the-go bundles of cram packed nutrients are adaptable to whatever seeds, fruit or nuts you may have in your kitchen. Put your thinking cap on & get creative! You can either make your own homemade granola (if you have the time & patience, kudos sister) or you can buy the pre made stuff.  Either way it’s a win-win situation.

 

Granola Cups (5-6 cups)

2 cups of Granola (mix in whatever dried fruit, seed or nut you like)

¼ cup of smooth peanut butter

90 ml honey

1 tbsp sugar

½ tsp Vanilla Extract

Vanilla Yogurt (filling)

Berries (garnish)

Directions:

1. In a non stick saucepan combine the peanut butter, honey, sugar & vanilla extract together over medium-low heat.

2. Once the mixture is thoroughly combined and appears smooth–remove from heat and add to a bowl with the 2 cups of granola.

3. Next, spray a little cooking spray inside each muffin tin & then drop enough of the granola mixture to fill the bottom of the tin. Beginning in the middle, start pressing down gently with your fingers to form a bowl. Keep pressing gently around the sides to complete the shape. Refrigerate for 30 minutes.

4. Pop those bad boys out & fill with vanilla yogurt. Top with berries and indulge.
