Garlicky-Cilantro Fries and Henrik Sedin
I ran into Henrik Sedin in the produce section of IGA today. He was standing beside the cilantro looking very confused (go figure). In hopes that he would strike a conversation with me, I too went and stood beside the cilantro. Confused. After a few awkward seconds, I looked creepy so I quickly grabbed a bundle of cilantro (that I didn’t need) and squirreled my way to the cash register.
Clearly, there isn’t a bright future for us.
When I got home I looked at the cilantro in the same confused manner that Henrik had. What on earth should I do with “it”? Miraculously in a moment of need—the cilantro gods spoke to me. “Baked Garlicky-Cilantro Fries “they said. Ah, yes.
Baked Garlicky Cilantro Fries
5-6 russet potatoes, cut into thin fries
2 Tbsp olive oil
1/4 tsp garlic powder
1/2 – 3/4 tsp cayenne pepper
1/4 c. cilantro leaves, finely chopped
Directions:
1. Preheat oven to 425 & line a baking tray with tin foil.
2. Cut the potatoes into fries and damp dry with paper towel. Once dry, toss with olive oil, garlic powder & cayenne pepper.
3.Lay fries on a baking sheet and place in oven for 20-25 minutes (depending on your desired “crispiness”).
4. Once done toss in cilantro.
