Because I missed the chawanmushi from @masayoshisushi and decided to try making my own with the fresh Uni from @freshideasstarthere. In these Weck jars, sous-vide chawanmushi with dashi, mirin, and shiitake mushrooms, topped with some gorgeous Uni. #Chawanmushi is a Japanese hot appetizer. It is a type of egg custard, but not sweet. Went to Mr. Red Cafe and ordered the special pho with all kinds of beef, and their broth was very light and subtle compared to many other pho places. It felt very "healthy" as I was eating it, but all the beef ingredients tasted really good and tender! We were also recommended by the server this vermicelli dish. Apparently it's a new menu item and its vermicelli noodle with beef rolls that are wrapped in betal leaves and fried! It was really delicious and I love how their vermicelli noodles weren't dry and not all tangled together. For sure I will order this again! PS: the lonely chicken wing in the corner is another dish we ordered, which will come in my next post.
