Fanny Bay Oyster Bar opening in downtown's Stadium District

Seafood lovers in Vancouver will soon have one more destination for bellying up to the oyster bar, as Vancouver Island’s Fanny Bay Oysters launched their first Canadian restaurant, right in downtown’s emerging Stadium District.

Fanny Bay Oyster Bar is a 50-seat full-service restaurant that is going into a brand new space at Vancouver’s Hotel Blu, a boutique hotel located at Robson and Cambie right near B.C. Place stadium.

The concept is what they call “tide-to-table,” Fanny Bay Oysters’ General Manager Brian Yip tells Vancity Buzz. The restaurant will showcase fresh, local ingredients, in particular seafood and shellfish, and of course oysters. 16 of the restaurant’s seats will be part of the oyster “bar.”

Fanny Bay Oyster Bar will be open for lunch, dinner, and weekend brunch service, Yip confirms.

While this is the first Canadian restaurant for Fanny Bay Oysters, their U.S. branch, Taylor Shellfish, operates three successful oyster bar restaurants in Seattle. This new Vancouver venture will operate on a similar model, with the restaurant a perfect showplace for the farm and processor’s product, as well as carefully selected ingredients from other farms in the region.

Fanny Bay Oyster Bar is aiming for a mid-May opening.
