
If you’ve been looking for an excuse to book a fancy dinner, brunch date, or cocktail night in Vancouver, this might be it.
Notch8 Restaurant & Bar has just unveiled a fresh new lineup of breakfast, lunch, dinner, and brunch dishes â and it’s bringing together classic French flavours, Pacific Northwest ingredients, and a little bit of old-school glamour.
Tucked inside the Fairmont Hotel Vancouver, the restaurant is already known for its chic dining room and elevated cuisine. Now, under the direction of Executive Chef Mike Reid, it’s entering a new chapter while paying tribute to its nearly nine decades of history.
Here’s what to expect.
A whole new culinary experience
The updated menu leans into both heritage and seasonality. Seafood lovers can dig into a rich Seafood Chowder loaded with prawns, salmon, and mussels or opt for the Steelhead and Scallops Grenobloise, which showcases some of the region’s best coastal ingredients.
Classic French dishes remain a major part of the experience, with favourites like Duck Ă l’Orange, Foie Gras & Fig Terrine, and Steak au Poivre making appearances throughout the menu.
At the same time, contemporary West Coast influences shine through in dishes like Bison Cru and a refreshed Tuna Niçoise featuring seared ahi tuna.
For groups, there are plenty of shareable options to pass around the table, including Mussels Frites and Baked Brie en Cocotte. And if dessert is non-negotiable, guests can finish their meal with nostalgic showstoppers like a Baked Alaska or a traditional Gâteau Basque.
Cocktails inspired by another era

The refresh extends beyond the kitchen, too. The cocktail menu now features drinks inspired by different eras of the hotel’s history, with modern takes on pre- and post-Prohibition classics.
There’s also a brand new tasting experience called “Ă Toi!”, a multi-course journey designed to showcase the team’s favourite flavours and techniques.
