At his namesake Chocolaterie and Patisserie in Burnaby Heights, Christophe Bonzon uses premium Swiss chocolate Carma in his stunning creations. At Bel Café for Easter they’ve got the Religieuse, a traditional French pastry named after the nuns that they resemble. They’re made of two choux pastry puffs filled with either a whipped dark chocolate and orange Valrhona ganache or calamansi crème finished with a white chocolate ganache, and each variation is also topped with a beautiful Valrhona chocolate décor.
