Blue Water Cafe's Unsung Heroes Festival reveals epic menu for 2019
Blue Water Cafe has been concocting weird and wonderful culinary creations from the sea for its annual Unsung Heroes Festival for over a decade, and this year’s selection is no different.
Now in its 15th year, Executive Chef Frank Pabst has created an array of delights not commonly found on many menus for the festival, which runs throughout the month until February 28.

Chef Pabst has also integrated sustainable seafood, as usual, for the 2019 event’s menu.
The eight-course menu features dishes such as Carp Roe ‘Bombolini’, Red Sea Cucumber ‘Carbonara’, Octopus ‘Croquetas,’ Sturgeon Liver ‘Pate’, Grey Mullet Bottarga ‘Negitoro Pizza’, Sea Urchin ‘Quiche’, Mackerel ‘Avocado Toast’, and a Jellyfish ‘Waffle’.

If patrons would like drink pairings, Blue Water’s Wine Director William Mulholland has created wine, sake, and beer suggestions for each dish for an additional cost.
This one-of-a-kind menu will available alongside Blue Water’s iconic signature menu, and the Unsung Heroes dishes will also be up for order for family-style sharing.
