Nordstrom Vancouver restaurant Bistro Verde is a new city gem (PHOTOS)

Perched on the third floor of the southwest corner of downtown Vancouver’s new Nordstrom store, Bistro Verde restaurant is set to become a new institution in the city’s thriving dining scene.

The Nordstrom-operated dining venue overlooks Robson Square and the Vancouver Art Gallery providing customers with an unparalleled urban backdrop for their dining experience. It seats approximately 186 people and is built with a modern and contemporary design, with an obvious West Coast twist through the extensive usage of wood elements and rock stone.

Food is prepared behind a large glass-enclosed exhibition kitchen under the watchful eye of J.J. Fraser, a local chef who previously worked for Earls Restaurant. There is a sizeable full bar backdropped by an impressive wall of wines, serving specialty cocktails, beer and, of course, wine.

The lunch and dinner menu consists of freshly prepared salads, entrees, sandwiches and desserts, with staff noting that the wild salmon and maple glazed bacon sandwich is a favourite.

Following through with Nordstrom Vancouver’s commitment to adapt to local sensibilities, all seafood served is ocean-friendly as part of the restaurant’s participation in the Vancouver Aquarium’s OceanWise program.

The restaurant is one of three food and beverage options available at the expansive three-storey, 230,000-square-foot store. There is a cafe just beyond the store entrance at the intersection of Granville and West Georgia streets and a full-service bar lounge is located on the second floor by the escalators.

Diners can enter the restaurant through the store or an express elevator accessible from the outside on Howe Street. This allows the restaurant to remain open beyond the store hours.

A number of Nordstrom’s store locations carry similar in-store concept restaurants, and food and beverage options at downtown Vancouver’s two other major department stores already exist or are planned.

Not too long ago, Hudson’s Bay Vancouver’s sixth floor was a cafeteria before it was converted into the new men’s fashion section. A food hall in the basement, near the Granville Station ticketing concourse, replaced the cafeteria.

Holt Renfrew is also planning on adding an 80-seat, 3,500-square-foot cafe on the rooftop of its building at Granville and Dunsmuir streets.
