A Japanese wagashi master is offering classes in Toronto this spring
Wagashi master Junichi Mitsubori is landing in Toronto this spring to impart his beautiful sweet-making style on Toronto chefs!
The third generation wagashi artisan and President of Japanese Sweets Association Board is famous for his artistic Japanese-style confections. Come learn about the complicated beauty of an upcoming trend in the western world of sweets.
Mitsubori will host a series of classes over a week in April covering basics like nerikiri dough making, and how-tos on cooking various bean pastes from scratch, aduki bean filling production, colour, nerikiri wrapping techniques, and shaping and forming techniques.
Meanwhile, intermediate sessions will introduce traditional and innovative wagashi tools, advanced shaping and colouring techniques, expressing wagashi aesthetics, special recipes, and more.
Specific designs can also be learned in single day workshops devoted to scissors-work or needle-work.
The hands-on, instructional classes aren’t cheap to attend and while hobbyists and enthusiasts are welcome, the masterclasses are billed as a way to “raise attention in the professional chef industry.”
