Hyped-up Toronto pasta pop-up just opened a permanent location

A pasta business in Toronto that’s been making a splash for the past year just settled into a permanent location.

While self-serve frozen yogurt and acai spot Haydn’s was undeniably the toast of Stackt Market this past summer, for those more inclined towards savoury treats, it’s all about Sundays Pasta Lab.

Having opened in the market in the summer of 2024, Sundays has become a staple during its year at Stackt, the sizeable cups they serve their pasta in equally recognizable as Haydn’s green bowls.

Something of a Subway-esque approach to pasta, Sundays lets you assemble your ideal bowl of pasta from your choice of shape (mercifully no penne, macaroni, or spaghetti in sight), sauce, protein, veggies, and extras.

Think everything from classic, slow-simmered tomato sauce and sun-dried tomato pesto to their titular double-braised ragu with oxtail, short rib, and chuck, only available every Sunday. However, this spot put its own distinct spin on it all when it comes to the noodles.

At Sundays, all the pasta is made without eggs, so those with an allergy can enjoy it too, and with semolina flour. Compared to typical 00 flour pasta, semolina is high in protein (20 grams per serving of pasta, to be exact) and fibre, and full of vitamins.

Better yet, a bowl — or should we say cup — of pasta starts at just $10, running all the way up to $21 for that legendary Sundays Best ragu.

It’s no surprise, then, that people have latched on to the concept the way they have.

Now, there’s even more good news for fans of Sundays Pasta Lab. The concept has opened another location in Liberty Village’s Liberty Market.

The new location officially soft-opened on Friday, Sept. 5, and is currently operating on slightly reduced hours while they iron out the kinks, ensuring, as the business writes in a post on its Instagram, that everything is up to its “Sundays standard.”

There’s no word on what the new location means for the future of the pre-existing one at Stackt Market, but sometimes no news is good news.

For the time being, they’re both up and running, ready to serve you the pasta they churn out fresh, in-house, right in front of your eyes.
