Calgary’s own Phil & Sebastian coffee roasters are offering, for a limited time only, a set of specialty made-to-order coffee mocktails.
Currently being served at Phil & Sebastian’s Simmons Building location, these coffee-based alcohol-free drinks include the Irishman’s Cascara and the Mulled Cascara.
Using these drinks as a way for Phil & Sebastian’s baristas to express their creativity, the homegrown coffee roasters accepted 11 different drink recipe submissions from staff, and chose two to feature as their seasonal coffee cocktail offering.
“This seasonality is meant to reflect the nature of our approach to sourcing coffee — ever-changing, and always in-season,” says Vanessa Ng, Wholesale Manager.
“Our staff needed to somehow implement cascara [dried coffee cherry skins–a unique ingredient that is rarely found beyond coffee-producing countries] into the recipes of their drinks,” remarks Ng.
Phil & Sebastian’s Marda Loop manager, Tim Houghton, crafted the Irishman’s Cascara, which is a take on an Irish coffee. It’s a mix of brewed coffee, steeped cascara tea, topped with cascara-infused fresh whipped cream, and sprinkled with candied cascara. It is also served with a side of candied cascara.
Barista Lauren Wilson created the Mulled Cascara as a take on mulled cider. It’s cascara, steeped with cinnamon and clove, and served with a candied orange slice.
Phil & Sebastian’s Simmons Building locale, which has been designed as a lab of sorts to showcase new drinks across the seasons, will serve these speciality beverages until they finish their supply of cascara, which will mostly likely be mid-spring.
