MARKET Restaurant to launch retail booth at Calgary Farmers' Market

Calgary’s revered 17th Avenue dining destination, MARKET has announced plans to open a retail outpost at the Calgary Farmers’ Market.

Officially welcoming customers as of January 28, the offshoot, which came about as interest in purchasing the restaurant’s signature sauces grew, will feature homemade sauces and pickled veggies, in addition to a variety of handcrafted chocolate bonbons, made on-site by Madison Toy, chief chocolatier.

“We were getting a lot of demand for our products to be sold as retail items,” says MARKET’s owner, Vanessa Salopek. “We [also] found that our bonbons were a big hit with people and thought that it would be a good idea to open up a little retail location to sell these items specifically.”

With no kitchen space to spare at MARKET’s restaurant, Salopek had to think of an alternative venue where she and her team could mass produce its chocolates; that’s when the idea to operate an outlet at the Farmer’s Market sprang to mind.

“So far, no restaurant in Calgary has really paired up with the Farmers’ Market to do this. We think it’s a great way to promote the restaurant while giving our guests the retail items they want.”

The small 10 by 14 foot booth, which will be managed by Salopek herself, and pastry/sous chef Kevin Lang, will stock an array of MARKET’s signature sauces, like ketchup and garlic aioli, as well as pickled vegetables, including beets and carrots. The outpost will also feature 10 different bonbon flavours weekly.

“We encourage potential customers to let us know via our social media, what flavours they want to see each week,” remarks Salopek.

One neat fact about MARKET’s hand-painted bonbons is that they will be composed of ingredients purchased directly from the Calgary Farmers’ Market itself. That means that customers can take comfort in knowing that the booth’s apple pie chocolate bonbons for example, will contain apples from one of the Farmers’ Market vendors.

In addition to the edible treats and pantry cupboard fillers on offer, Salopek also plans to use the retail space to promote the 17the Avenue restaurant. People will be able to make reservations from the booth, purchase Gift Cards, as well as receive marketing material promoting what’s going on in the restaurant.
