
Experience something eggs-perimental for under $10 from chefs and bartenders at Engineered Eats presented by Beakerhead from now until Sunday, September 20.
For this years Engineered Eats the participants must take what they know about eggs and create a dish or cocktail.
Below are their different creations:
80th & Ivy Modern Kitchen
Created a Truffle infused custard with crispy serrano ham and a basil caviar garnish.

Concocted the Kentucky Peach Sour: bourbon, peach schnapps, egg whites, lemon juice, simple syrup, bitters, garnished with agar pearls (2 oz. alcohol).

Designed Devilish Eggs: hard boiled egg whites, 68.3°C sous vide yolks, shallots, dijon foam and cornichons. They also created Dynamic Whiskey Sour: Bourbon, sugar, lemon, egg white (1 oz. alcohol).

Their creations are the wingless devil, which is a deviled egg with blue cheese and frank’s Red Hot filling. You can also try the Smoked Pavlovian: smoked banana between two meringue cakes, topped with sweet whipped cream, dark chocolate shavings and a cherry.

The Towering Inferno: Chocolate baked egg yolk gelato on a red velvet waffle, topped with farmers gunk then torched.

Designed this little dish Catch Style with Egg Gel and Pearls, bacon sand, rye tuile, rosemary incense.
