Cook It Raw Alberta: Chefs collaborate for wilderness-inspired feast

Dec 19 2017, 2:40 am

If you’re at a loose end this Thanksgiving weekend why not check out Cook It Raw’s Feast on the Frontier, which takes place this Sunday at Calgary’s very own Rouge Restaurant.

This public event is the culmination of the week-long Cook It Raw Alberta program, which has brought together 14 of Alberta’s top culinary talents (10 of whom are from Calgary) and seven internationally renowned chefs.

Fresh from their exploration of the Canmore Kananaskis region, where wild and natural ingredients that have come to define Alberta cuisine flourish; the chefs will return to Calgary to create, collaborate, and unveil seven iconic Alberta dishes inspired by the landscape, produce, and products encountered.

Discovering the culinary culture of Alberta, the chefs will explore the possibilities of cuisine as teams and elevate it to the next level, using their collective cooking prowess. At the event, attendees will be able to meet the chefs while sampling their culinary creations at food stations specifically set up in the whimsical back garden at Rouge.

Participating chefs include Justin Leboe (Model Milk, Calgary), Duncan Ly (Yellow Door Bistro, Calgary), Paul Rogalski (Rouge, Calgary), John MacNeil (Black Pig Bistro, Calgary), Brayden Kozak (Three Boars, Edmonton), Blair Lebsack (Rge Rd, Edmonton), Eden Hrabec (Crazyweed, Canmore), and more.
