Vancouver's newest vegan eatery is opening soon (PHOTOS)

It’s been keeping a pretty low profile up until now, but East Vancouver’s newest vegan eatery, Soil, is gearing up to open its doors in just a few weeks.

This spot comes to us from the same team as the much-loved Blue Heron Creamery, BCā€™s first strictly-vegan cheese shop.

Patrons will find Soil right beside the popular cheese shop atĀ 2408 Main Street, where it will be serving up vegan cuisine for brunch and lunch.

Owner Karen McAthy told Daily Hive the soon-to-be-open, 600-sq-ft luncheonette will serve as a place for people to come, sit, and enjoy some delicious plant-based grub.

“We want people to take a minute and sit down,” McAthy said over the phone, “we’re a luncheonette, not a cafe, and not a grab and go spot.”

Naturally, Soil will be heavily focusedĀ on local produce with local products and collaborating with local farmers.

Soil will have seating for around 24 people and will be closed on Monday and Tuesday to leave the space open for workshop and pop-up bookings that share the same plant-based ideas.
