During the Pride festivities, Beach Bay Cafe’s award-winning Bar Manager Adrian Lindner will be mixing the aptly named Pride Collins. This summer-forward sipper is made with rhubarb, lemon shrub, gin, and soda, and is best enjoyed al fresco overlooking the water on Beach Bay Cafe’s welcoming patio.

An effervescent blend of gin, Fernet Branca and house-made herbal rhubarb grapefruit soda, La Diverrsité is a little sweet, a little bitter and a whole lot of fun. Chambar’s La Diversité cocktail will be available over the long weekend (July 30 to August 1).

Bar Manager Kaitlyn Stewart of Royal Dinette is offering a special Pride cocktail for the entire month of July. This vibrant-coloured libation is made using a homemade milk liqueur, which is infused with blueberries to create a bold purple hue (purple being a signature colour of the LGBTQ community). Stewart says, “I chose to name the cocktail “Harvey Milk” to pay homage to the biggest and most significant gay advocate of the last 50 years.”
