The Passion8 Dessert Cafe is a new bingsoo spot located at 3010 Cambie Street, and the food it’s serving up is impressive to say the least.
For those who aren’t familiar with this extremely Instagrammable dessert, bingsoo/bingsu or formally ‘Patbingsu’, is a Korean delicacy that consists of shaved ice, chopped fruit, condensed milk, fruit syrup, and Azuki beans. There are many varieties of this traditional treat in existence today, and Passion8 has opened its doors to bring Vancouverites a modern take on the ancient classic.

Bingsoo is labelled as ‘100% Milk Shaved‘ on Passion8’s menu, and there are a ton of combos and flavours to pick from: Red Bean Milk, Multigrain Injulmi, Matchacha, Mr. Choco Brown, Honey Berry Cheesecake, Strawberry Cheesecake, Mangobongo, and Monster’s Egg. Choose from a cup or a bowl, and feel free to add toppings such as ice cream, red beans, rice cakes, or more cheesecake.

Patrons can also get Toasterys here – a bread-like pastry that comes in a variety of flavours: Multigrain Injulmi, Nutella Choco, Creamcheese Orange, and Honey Creamcheese. Passion8 also has Pan Cronuts available in Nutella Brownie or Strawberry flavours, along with drinks like lattes, espressos, coffees, and teas.

A definite must-try for those of us who are daring, is the ‘Monster Egg’ dessert. We’re not entirely sure what’s going on here, but it’s intriguing.
