This OG Chinatown chef is opening a new Vietnamese street food spot

The Saigon Hustle is opening soon at the corner of Queen and Cameron.

A quick-service 15-seater slinging Vietnamese street foods, the new spot is the latest project from Quinten Tran (of Fresh Off The Boat) and his mom.

Taking over the former address of Rose City Kitchen, the new Viet eatery neighbours Tran’s popular seafood joint known for melding Asian-American influences into splendid creations like the Po’boy Banh Mi and Softshell Crab Sandwiches.

Expect this new spot to channel old school Toronto.

Mẹ (mama) Tran, first name Kim, is the former owner of Chinatown institution Bún Saigon. She’s coming out of retirement to share her recipes for bún (noodles), rolls, rice platters, and shakes, with Toronto diners once again.

The restaurant is set to open sometime before the end of May. Seating will be limited but look forward to brisk takeaway.
