It started with an adventure. David and his fiancé, Nicole, had just graduated from University, and like many young people, decided to do some travelling before settling down.
They booked a trip for Europe, and part of their trip included Brussels. Their first morning in Brussels, they discovered a small waffle shop, and kept going back every day for breakfast, they loved them so much. The owner of the shop was getting ready to retire, and he offered to teach them how to make authentic Belgian Liège waffles. It was an offer they couldn’t refuse, so they cancelled their trip to Germany, and stayed instead in Brussels for two and a half weeks, learning all the trade secrets to making the perfect waffle.
And so, it was that two people with zero restaurant, business or cooking experience came to open up a waffle place. Waffle Gone Wild opened in March of 2013, in a tiny space with five tables beside the Shoppers Drug Mart on Broadway and Bayswater.
Traditional waffles are usually leavened with baking powder, and often are square in shape. Liège waffles, however, are leavened with yeast, and are baked with the addition of pearl sugar that is sprinkled into the batter at the last moment. This results in pockets of caramelization inside a waffle that is light on the inside, but crispy on the outside. And each and every waffle at Waffle Gone Wild is baked to order.
For the traditionalists amongst you, there are lots to satisfy: chocolate, fruit and ice cream. You can go à la carte, customizing your waffle with whatever you like on top, or you can order one of their specialties: Strawberry Heaven, Banana Nutella, Orange Delight or the Chocolate Volcano.
If your tastes are more savoury, they have a California Waffle, stuffed with crab and avocado, reminiscent of a California sushi roll, or their brunch favourite, a waffle topped with melted cheese and a poached egg.
For the really adventurous, there is the matcha waffle (owner David’s favourite), flavoured with green tea powder. If you want to get really wild, try the okonomiyaki waffle. It features a sweet waffle topped with crab meat and seaweed, japanese mayo, a teriyaki-like sauce, bonito flakes, and bits of apple for crunch.
