Summer Eats: Honey Glazed Salmon and Mango Salsa

Good morning foodies! It looks like the Vancity sun has finally come out to play! And to keep the good weather coming–I’m going to share one of my absolute favorite summer recipes: Honey Glazed Salmon with Mango & Apple Salsa. It ‘s light, refreshing and so incredibly good for you. Get creative with what you’ll serve alongside your salmon! Brown rice, asparagus, and watermelon are just a few ideas.

Honey Glazed Salmon Recipe

4 skinless salmon fillets (about 6 ounces each)

3 tbsp of honey

2 tbsp brown sugar

3 tbsp soy sauce

2 tsp sesame oil

Mango Salsa Recipe

1/2 medium red onion, finely chopped

1 jalapeno chile, minced (ribs and seeds included for more heat, if desired)

1 ripe mango, peeled, pitted, and diced (about 1 cup)

2 tablespoons chopped fresh cilantro, plus sprigs for garnish

3 tablespoons fresh lime juice

1 small granny smith apple, peeled and diced (about 1 cup)

Directions:

1. Combine the salmon marinade ingredients together (honey, brown sugar, soy sauce, sesame oil) and allow the salmon fillets to marinade for minimum 30 minutes.

2. In the meantime make the mango salsa by combining the listed ingredients together in a medium sized bowl.

3. Heat BBQ to medium-high and cook salmon fillets for approximately 6 minutes or until filets are opaque throughout.

4. Top with mango salsa & smile.
