5 foods you thought you knew

Gastown’s Secret Location is well-known for the upscale presentation in its stylish concept store. “We take pride on cooking food that connects with our guest with items that are familiar, done with more attention to detail and care,” says Executive Chef Montgomery Lau.

In honour of Secret Location’s new dinner, lunch and brunch menus (now available), Chef Lau talked us through five of the restaurant’s new dishes, all of which re-imagine thoughts that you thought you knew.

Squash

Roasted local red curry squash with cinnamon served with toasted pumpkin seeds is familiar this time of year. What stands out in the Roasted Squash Salad is the addition of grilled radicchio. The charring process along with fresh endive and pears mellows out any bitterness and completes the dish. Available during lunch.

Po’ Boy Sandwich

The bread and sauces in this version of the traditional Louisiana sub sandwich are hand crafted. Secret Location ferments their own chilies to make house hot sauce with a unique sweet, spicy, and citrus flavour. When last have you tried oysters? Try the hearty Oyster Po’ Boy Sandwich during lunch service.

Not one to rest on the success of their brunch Lobster Hash, Secret Location now offers a dinner Butter Poached Lobster. Chef Lau’s version pairs sweet aromatic curry sauce with the earthy tones of burdock and sunchoke. Sunchoke is the star in this dish; used as a chip, cooked tender, and made into a purée.

Grilled Mushrooms

Grilled and lightly charred maitake mushrooms are based with a maitake mushroom tea. Chef Lau adds charred sunchoke and creamy rich potato purée then finishes with a pine needle infused oil and crispy pine. The Maitake Mushrooms with Pine is currently one of the courses in Secret Location’s tasting menu.

Artichokes

Another tasting menu course is the Braised Baby Artichoke with Humbolt Squid. Artichokes are braised with white wine, saffron, and aromatic vegetables. The same cooking liquid is used to pickle humbolt squid. The dish is completed with purple potatoes, pea shoots and “an egg emulsion that adds richness without interfering with the delicate flavours of the artichoke,” says Chef Lau.
