We’re taking a tasty tour of Vancouver’s many brunches to create The Ultimate Vancouver Brunch Guide. This week we’re on West 4th sampling some of Fable’s delicious farm-to-table offerings.

Showcasing local, wholesome ingredients and delivering fresh flavours in a casual and non-pretentious setting, Fable dishes up one of the city’s tastiest weekend brunches.

Even before the door to Top Chef Canada contestant Chef Trevor Bird’s Fable opens at 10:30 a.m. on Saturday and Sunday, a line of hungry eaters ready to chow down on the restaurant’s delicious fare begins to form.

With no reservations (except on the last Sunday of every month for a the restaurant’s Boozy Brunch where they feature their premium cocktails: mimosas, Caesars, and highballs at cost price), patrons who show up after 11 a.m. can expect a small but worthy wait for a table.

Once seated, either in the main dining area or at the Chef’s Table (a bench running along the restaurant’s open plan kitchen), patrons have the choice between a variety of temptations.

Unlike other brunch spots around the city where the menu lists off a huge amount of food, the menu at Fable is concise and limited to about ten dishes. For the indecisive brunch goer this is an ideal amount of dishes to choose from as too many options can be overwhelming.

A smaller menu also highlights that the chefs do what they do and do it well. A bite of any of the dishes served proves this instantly!

Although the menu is subject to change depending on the season, visitors to Fable can still expect to see the restaurant’s wildly popular pulled pork Johnny Cakes ($13); a range of Eggs Benedict accompanied by an olive oil Hollandaise ($15); French toast topped with mascarpone, candied walnuts and seasonal preserves ($15), and the kitchen’s garden omelette ($12) listed.

Diners who enjoy scrambled eggs can not go past Fable’s take on this brunch time essential. Presented in jar and served with Fable brioche and roasted potato, Fable’s farm fresh eggs are perfectly cooked and layered with sautéed spinach, bacon bits, and a parmesan cream. While the ingredients in this dish have been kept simple the combination of flavours achieved are truly stunning.

Whilst not listed on the menu brunch at Fable should either start or end with a double chocolate scone. This home baked treat, served with a berry compote is soft, cakey and absolutely stuffed with melted chocolate.

Like the menu, the farm theme extends to the restaurant’s décor. Inside, Fable is a warm place that features a hanging pitchfork chandelier (along with other farm memorabilia), an exposed red brick wall, timber beams and a gathering of dark wooden tables.

With a casual atmosphere, excellent service, and great tasting food, brunch at Fable is guaranteed to be a delicious and memorable experience.
