Botanist: Restaurant, cocktail lab, and champagne lounge opening this spring

Botany, terroir, nature: All of these are at the core behind the chic new restaurant and bar concept that will open this spring at the Fairmont Pacific Rim.

Called Botanist, the new high concept food and bev venue is replacing ORU, the restaurant that never quite grasped an identity of its own inside the posh Coal Harbour hotel built for the 2010 Vancouver Olympics.

“The vibrant restaurant space will feature collection of diverse venues – a cocktail bar and lab, garden, dining room, and champagne lounge, all inspired by the principals of botany,” notes a media release.

Those who are already in the know are well-aware of how great the Fairmont Pac Rim is at producing gorgeous cocktails (thanks in no small part to the direction of award-winning bartender Grant Sceney, who will take the creative lead on Botanist’s “bar and cocktail lab.”

In an exciting move, celebrated bartender David Wolowidnyk will take the role of Head Bartender, and Wine Director Jill Spoor will oversee the champagne lounge and wine program. At the stoves will be Executive Chef Hector Laguna and Botanist’s GM will be Shon Jones-Parry.

To inject more local flavour–at least in terms of the atmosphere–Botanist will credit firm Ste. Marie Design and award-winning Glasfurd & Walker.

ORU shuttered right after the holiday season, and Botanist is projected to open in April.
