Last year, when we did a post just on avocado toast, a chorus of disbelievers spoke out. It seems that the humble dish of toasted bread, topped with avocado (be it smeared, sliced, or even chunked) with additions like an egg, olive oil, onions, cheese, or what have you, didn’t seem fitting to be, like, an actual food thing.

Here’s the thing: It totally is. Not only has “things on toast” been a rising food trend for the past couple of years, but in particular avocado being the thing on the toast has mass appeal. Vegans dig it. Health junkies dig it. People who want to eat what the cool people eat dig it.

Oh…and it tastes good, delivers those “good fats” and a nice protein-carb combo, and works as a snack, a breakfast, or lunch dish.

With probably the best avocado on toast in town, Nelson the Seagull is not to be missed.
