From high-end add-ons, meaty morsels, or an epic eating challenge option, here are six over the top grilled cheese sandwiches to try in Vancouver.

Mom’s Meatloaf at Mom’s Grilled Cheese Truck

Sure to cure your Monday blues is the Mom’s Meatloaf from Vancouver’s Mom’s Grilled Cheese truck. This four-wheeled emporium of all things cheesy delicious has a daily special, and the week gets underway when they put together a hearty slice of homemade meatloaf surrounded by melted mozzarella and marinara sauce on crusty French bread. Mamma mia! If you can’t wait until Monday rolls around, their Jackson 3 (three slices of sourdough with brie, boursin, and gruyere) on Thursday or Mister Marley (West Indian style grilled chicken, Mango chutney paired with tasty pepperjack, creamy Havarti on potato bread) on Friday are also worth checking out.

When it comes to Grilled Cheese versus Mac and Cheese, why pick sides? Melt City means more grilled cheese goodness that roams the city, setting up soon on Thursdays at Terminal and Main and Fridays at the Shipyards Market in North Vancouver (and more markets as the warm weather takes over). Pulled Pork or Short Rib Grilled Cheese at Catch 122

If you’re headed to all-day brunch at Catch 122, you don’t have to stick to the ol’ eggs or waffle routine. Among their sandwich options is their grilled cheese, made with gruyère cheese and smoked mayo on sourdough

Uncle Grant’s Challenge at Lucy’s Eastside Diner

This is perhaps a grilled cheese sandwich experience for the truly insane. Lucy’s Eastside Diner has something called the Uncle Grant’s Challenge, so you’ve got to be all in to try this grilled cheese creation. They make a six-patty burger, top it with 12 pieces of bacon and six slices of cheese…and use a pair of grilled cheese sandwiches as buns. On the side are poutine, mac and cheese, and a 24-ounce milkshake.  If you can’t handle it, you can go simple with their regular grilled cheese, and push your limits by making it “double decker” or getting it with guacamole.
