New vegan Danish bakery to open in 'Vegandale' this month

The veganization of Parkdale is rapidly accelerating! Just days after the announcement that Toronto’s first ever vegan brewery and restaurant is moving into the neighbourhood, now there’s also a new Danish bakery setting up shop in the area too.

Copenhagen is a collaboration from the 5700 Inc. (founders of the Vegandale Food Drink Festivals and restaurants including Doomie’s TorontoThe Imperative and Mythology) in partnership with the family behind Thornhill’s Vegan Danish Bakery.

According to a press release, “the Schlederman family is comprised of three sisters and two vikings – with lineage tying them to the Danish Royal Family of their hometown, Denmark. All passionate vegans, the siblings behind Copenhagen are whipping up sinful desserts and baked goods, without any of the eggs, dairy or animal byproducts.”

The incoming bakery and cafe is expected to open at the end of July and will offer coffees and teas along with a range of house-made pastries. Signature flaky danishes in flavours like chocolate and strawberry are the main draw but also look forward to cupcakes, butter tarts, cheesecake bars, cinnamon sticky buns, and more.

“We are so thrilled to be able to provide Vegandale with a new staple for freshly baked treats,” says Shannon Schlederman, of Copenhagen. “Forget what you’ve been told about veganism and stop by for a little indulgence. We promise it won’t disappoint!”
