White Rose Kitchen & Coal Shed Smokehouse: Where veg and meat meet (sort of)

There’s a unique duo of restaurants prepping to open this month in Bowness, bringing together–but separately–vegetarian fare and take-out meats. White Rose Kitchen will offer an all-veggie menu in a cozy indoor space (with patio), while Coal Shed Smokehouse will be out front as a take-out window selling all sorts of meat dishes.

These two concepts may seem like they clash (and for those concerned, because the kitchen for Coal Shed is fully self-contained, there will be no cross-contamination), however they also represent a bold new way for people following all sorts of diets to eat.

White Rose Kitchen will boast 45 seats, and a sunny patio out front, according to a rep from restaurant’s parent company, Cuisine Concepts (Big Fish, Open Range). The name and the vintage decor takes its cue from the location, which was a White Rose gas station in the 1950s.

On the menu are vegetarian dishes, including a majority that are gluten-free. “Our focus is to provide a modern and creative vegetarian menu that is approachable and satisfying for both vegetarians and non-vegetarians alike,” adds Cuisine Concepts in an email to Daily Hive.

The dishes are served family-style, and are priced at $12 and $18 per plate. The food showcases fresh, seasonal fare, embracing local and global flavours. One plate pairs Halloumi cheese with three-onion marmalade, yuzu oil, and whole grain crisps, while another is comprised of a crispy yellow beet risotto cake with radicchio, pluot plum, goat cheese, and an almond harissa.

White Rose will also serve a Sunday brunch, featuring items like a duck egg omelette, grilled carrot cake, and fried oatmeal.

Out the front door of White Rose is the Coal Shed Smokehouse, which is a walk-up window dishing up take-out smoked, braised, and grilled meats. Think Bison Short Ribs, Alberta Lamb Shank, Beef Brisket, and organic chicken, with sides like Roasted Yam Sage Cornbread and Warm Smoked Potato Salad, among other temptations. The Coal Shed will be open 11 am to 7 pm Monday through Saturday.

Dinner services kicks off Wednesday, July 13, with lunch starting the following day.
