Since their re-launch in 2009, Calgary’s own Fiasco Gelato has been drawing in locals and visitors alike with their scrumptious take on fine Italian gelato.
With one brick and mortar store, a test kitchen, two food trucks and a Vespa–which can be hired for small events–Calgarians are never too far away from a Fiasco Gelato fix.
Drop by Fiasco’s HQ and Test Kitchen, located at 110-221 19th Street SE, on any day of the week and you will be greeted by a modern yet inviting space, as well as 16 enticing gelato flavours.
Created from fresh ingredients, which are sourced locally when possible, and handcrafted in small batches, Fiasco offers a range of innovative and rotating gelato and sorbetto flavours with decadent textures, which include Blueberry Basil, Blood Orange, Cucumber Lime, and Dark Chocolate Caramel Sea Salt, just to name a few.

about the purpose than the profit,” says James Boettcher, owner of Fiasco Gelato (aka the Chief Idea Officer). This dedication and passion for the business, which is shared by the entire Fiasco crew is evident in each mouthful of flavour-packed artisanal gelato.
They are, as they say, “Obsessed with quality,” so you won’t find artificial or GMO ingredients in Fiasco’s recipes. Instead you will discover a wonderful array of fresh and locally-harvested ingredients, like assorted herbs, rhubarb, oats and honey sourced from nearby farms.
Embracing the change in season, Fiasco has recently unveiled their Fall/Winter Collection, which features flavours like Brown Butter Pecan, Fig Cheesecake, White Chocolate Macadamia Nut, Rice Pudding, Black Sesame, Cinnamon Brioche, Salted Licorice, Dark Chocolate Blacksmith (a collaboration with Village Brewery) Bourbon Apricot Sorbetto, and Passionfruit Rosemary Sorbetto.
On top of their Fall/Winter and Spring/Summer roll outs Fiasco also whips up seasonal collections for Thanksgiving, the Holiday Season, Easter and Valentine’s Day, as well as a series they run called #LoveThisCity, where the Fiasco team collaborates on a flavour with another local business. So far Fiasco has worked with Caffe Rosso, Camp Brand Goods, The Calgary Zoo, and United Way.
Coming up with the flavours is a collaborative effort, says Brittany Back, Fiasco’s Social Media and Marketing Maven. “A group of four or five of us will start the planning a few months before a collection launches and will go through two weeks of tossing around ideas, discussing food trends, and flavour pairings, then we will go through four weeks of tastings, recipe adjusting, then the tough part of narrowing down the list.”
Not only does Fiasco sell gelato by the scoop ($4.50 – $6) and pint ($9), but their café also of offers espresso-based drinks using beans from Calgary’s own Café Rosso, drinking chocolate, house-made marshmallows, seasonal pastries, and a toast menu.
Everything Fiasco sells is made in-house. Determined not to cut any corners, Fiasco even grinds their own caramel dust (the secret ingredient in their drinking chocolate powder), which they make from burnt sugar.
The café, which features high ceilings, industrial fixtures, a vibrant teal stair case, a funky mural of Calgary’s cityscape, and Fiasco’s chocolate fountain, offers plenty of seating, including a cozy couch, where patrons can perch themselves and enjoy a freshly made coffee or gelato.
Fiasco is available all over Calgary, and can be found at Calgary Co-op, Sunterra, Planet Organic, Luke’s Drug Mart, as well as many smaller specialty grocers. You can also find Fiasco on the menu at over 50 restaurants and cafés. Although Calgary is Fiasco’s main focus, those seeking a Fiasco fix can still get their gelato all over Canada, in Victoria, Vancouver, Edmonton, Saskatoon, Winnipeg and Toronto, at select restaurants and grocery stores.
