The Tropic Shop creates handmade, sophisticated takes on the childhood favorite, popsicles. Made daily in Calgary, these “Tropic Pops”come in a variety of flavours like the Brazilian Breeze, made with whole pineapples blended with fresh mint leaves, frozen around chunks of pineapples and blueberries. Roaming vendor delloR Ice Cream specializes in “rolled ice cream.” Inspired by the frozen dessert places found on the streets of Vietnam, delloR’s frozen creations are made right in front of the customer (on a cold plate) to eat on the spot. Flavour combos include Cookies and Cream, Choco Hazelnutty, Funky Monkey (banana and Nutella) S’mores delloR, Good Morning Vietnam (Vietnamese coffee with condensed milk), and Berry Peel (strawberry and banana).
Gelato on a stick is what you will find at the recently opened Popbar at CrossIron Mills. Each of the frozen creations on offer can be dipped (in premium dark chocolate) and topped with a range of “Poppings,” including almonds, pistachios, hazelnuts, coconut, chocolate sprinkles, and caramel corn.

Newly launched this summer, Ice Ice Baby is a vendor specializing in the cold treat known as Snow Cream, or Shaved Ice Cream. You may have seen folks walking around Calgary-area night markets carrying bowls of brightly-coloured sweet goodness, piled high. With flavours like Strawberry Cheesecake, Mango, and Chocolate Brownie, these shaved ice treats meld the world of creamy richness and icy coldness…and they are fun to snap pics of to “feed” your Instagram.
Head to Made By Marcus’ first brick-and-mortar scoop shop and microcreamy for some mall batch, artisanal ice cream, including their Happy Camper sundae, which is a take on S’mores–complete with a big torched marshmallow sticking out on top. You’ll be a happy camper, too.
